With chilly temperatures setting in, and in celebration of National Hot Buttered Rum Day today, The Shannon Rose Irish Pub is sharing a recipe for the warm and comforting cocktail.

The Shannon Rose Irish Pub’s Hot Buttered Rum will be offered for a limited time in-restaurant from January 12 – 18 in celebration of National Hot Buttered Rum Day.

Whether you opt to visit the pub for this yummy libation or prefer to make it at home – this drink is perfect for the season!

Hot Buttered Rum

Ingredients:

Butter Mixture

  • 1 stick unsalted butter
  • 2 cups Brown Sugar
  • 1 tsp Cinnamon
  • ½ tsp Ground Nutmeg
  • Pinch of Ground Clove
  • Pinch of Salt

Drink

  • 2 Tbsp. Butter Mixture
  • 5 fl. oz. Mount Gay Black Barrel Rum
  • 6 fl. oz. Hot Water
  • 1 Tbsp. Fresh Whipped Cream

Directions:

Butter Mixture

  1. Place all the ingredients into a bowl.
  2. Using a spatula or an electric mixture with a paddle attachment, whip all the ingredients together for 5 minutes until it is light, fluffy and thoroughly combined.
  3. Chill until firm.

Drink

  1. Place 2 Tbsp. of the butter mixture into a Irish coffee mug,
  2. Add rum and hot water.
  3. Garnish with whipped cream.

cranberry-cooler_img_5888What a fun idea around the holidays – a cranberry drink! Definitely adding this neat cocktail from the fine folks at Spuntino Wine Bar & Italian Tapas to my repertoire for the holidays. 

Ingredients

  • 1 fl. oz. Van Gogh Citron (or any other citron flavored vodka)
  • 1/2 fl. oz. Limoncello
  • 1/2 fl. oz. Prosecco
  • 2.5 fl. oz. White Cranberry Juice
  • 1/2 fl. oz. Simple Syrup
  • 4 Cranberries
  • 1 Lemon Wheel

Preparation

1.       Combine vodka, limoncello, white cranberry juice, and simple syrup into a cocktail shaker with ice. Shake well.

2.       Empty contents of shaker and cranberries into desired glass – we usually use a highball glass.

3.       Top with prosecco and a lemon wheel. Enjoy!

Makes 1 cocktail.

tequila-slammerI’m trying out some cocktails flavor combinations in anticipation of the holidays in just a few weeks. I love grapefruit in my drinks so mixing it with silver tequila just makes sense to me. Plus, it’s a snap to put together when your guests arrive.

Ingredients:

  • 2 ounces of silver/blanco tequila, I used Patron
  • 4 ounces of freshly-squeezed pink grapefruit juice
  • 2 ounces of lemon lime soda
  • Pink Grapefruit segment/slice for garnish

Instructions:

Add all ingredients except the segment/slice of grapefruit to a cocktail shaker filled with ice. Shake for about 15 seconds, then ‘slam’ the shaker on a counter and pour immediately in a tall glass filled with ice. Garnish with the grapefruit segment/slice. The ‘slamming’ will create additional fizz, so be sure to serve immediately after that slam!

Makes one cocktail.

Kentucky Peach FizzPeaches are ripe and plentiful. How fun is this specialty cocktail by Spuntino Wine Bar & Italian Tapas in Clifton, NJ? Do you prefer to enjoy cocktails out? Go visit Spuntino to sample this drink and delicious tapas by Chef Josh Bernstein.

Ingredients

  • 1 oz. Maker’s Mark bourbon
  • 1 oz. Giffard Crème de Peche de Vigne
  • 1 oz. prosecco
  • 3 dashes Angostura bitters
  • 1 grilled peach wedge

Method

  • Add ice to cocktail shaker.
  • Add Maker’s Mark, crème de peche and bitters.
  • Shake vigorously.
  • Fill rocks glass with ice and strain contents of shaker into glass.
  • Top with prosecco and garnish with grilled peach wedge.

Blueberry SmashI’m always looking for fun cocktail recipes to serve at my various parties and lately, I’ve been really into gin drinks.

This summery cocktail recipe was provided by one of my favorite local spots to enjoy libations and tapas, Spuntino Wine Bar and Italian Tapas. I love the idea of incorporating Jersey blueberries in this drink.

Ingredients:

  • 1 fl oz. Prairie Gin
  • 3/4 fl oz. Grand Marnier
  • 5 fl oz. blueberry puree
  • 1 fl oz. pineapple juice
  • 1/2 oz. lime juice
  • 1/2 oz. simple syrup
  • 1 fl oz. prosecco
  • 6 blueberries

Method:

  1. Fill pint glass with ice.
  2. Add gin, Grand Marnier, blueberry puree, pineapple juice, lime juice and simple syrup.
  3. Empty contents of pint glass into cocktail shaker.
  4. Shake vigorously and strain into coupe glass.
  5. Float prosecco on top and garnish with a spear of blueberries.

Watermelon Strawberry Sangria

Watermelon Strawberry Sangria

Watermelon DrinkI simply find cold watermelon to be one of the most refreshing things on hot summer days and love to incorporate it in drinks, both alcoholic and not.

In this version of traditional sangria, I use watermelon and some ripe, sweet summer strawberries.

Ingredients:

  • 2 pounds watermelon, ideally seedless, peeled and cut into chunks
  • 10 medium strawberries, stemmed and cored
  • 1 750-ml bottle of dry white wine, Pinot Grigio or Sauvignon Blanc are good options
  • 1 cup Vodka
  • 4 ounces triple sec
  • 4 ounces simple syrup
  • Lime wedges, optional

Directions:

  1. In a blender, purée the watermelon and strawberries until smooth, about 1 minute. Pass the mixture through a fine sieve and add to a pitcher. Add the white wine, the Vodka, the triple sec and the simple syrup. Stir then refrigerate overnight or at least 4 hours.
  2. When ready to serve, stir the mixture and pour into ice-filled glasses. Garnish with lime wedges, if using.

Simple Syrup

Simple Syrup

Simple SyrupI make a double batch of this syrup and keep it in the fridge to add to cocktails. In an airtight container, it’ll keep for a month. Feel free to add aromatics to the hot syrup. Good options to add to the syrup are a large orange peel, basil/rosemary/mint leaves and vanilla beans. Syrup with aromatics will last about 10 days. 

In a medium saucepan over medium-high heat, combine 1 cup of granulated sugar and 1 cup of water. Bring the mixture to a boil, stirring occasionally, until sugar has completely dissolved. Allow to cool.

I received this fun and elegant cocktail recipe from the folks at Driscoll’s Berries. I think it’s perfect to kick off spring!

Ingredients:

  • 1 oz St. Germaine
  • 0.5 oz lemon juice
  • 0.5 oz simple syrup
  • 4 raspberries
  • Sparkling Brut
  • 2 Raspberries for garnish

Directions:

  1. Combine the St. Germaine, lemon juice, simple syrup
  2. and berries in a cocktail shaker.
  3. Top with ice and shake vigorously.
  4. Add 3 ounces sparkling Brut in a champagne coupe.
  5. Strain shaken contents into champagne coupe.
  6. Garnish with raspberry & blackberry.

Makes 1 cocktail.

Extra Lemony Lemonade

Extra Lemony Lemonade

LemonadeSummer’s a perfect time to squeeze some lemons for icy cool lemonade. This party-friendly drink can be served with or without booze, satisfying most guests at your next BBQ.

For lemonade that’s extra lemony, follow these simple steps:

  1. Cut a lemon into quarters. Remove the seeds and discard. Cut off the ends with a sharp knife and discard them but leave the rest of the peel on.
  2. In a blender, place:
    1. The quartered lemon pieces
    2. 2 tablespoon of granulated sugar (can substitute same amount of honey)
    3. 5 medium ice cubes
    4. 1 ½ cups of cold water
  3. Blend on full power for 1 minute, or until smooth.
  4. Serve in a tall glass over ice.

Makes one drink.

Note: You could add an ounce of Vodka to the glass prior to pouring the lemonade in it for a tasty adult beverage.
