The holiday season is in full swing and families across the country are planning their perfect holiday meals, tastiest treats or most delectable hors d’oeuvres.

Starting December 5, the Virginia Beach CVB is looking for creative, original recipes with its “12 Days of Christmas” Coastal Food Tours Getaway Giveaway Contest, a virtual cooking competition that will earn the winner a three-day, two-night stay in Virginia Beach for two people, with the chance to experience the new Coastal Food Tours program.

Now through December 16, visitors to the Virginia Beach Facebook page can submit a favorite recipe based on one of the days in the holiday classic, “The 12 Days of Christmas.”

In addition to free transportation and accommodations during their three-day, two-night stay, the winner and a guest will receive complimentary tickets to the Boardwalk Food Tour in Virginia Beach, the Granby Street Food Tour and complimentary tickets to other attractions, including the Virginia Aquarium and Marine Science Center. Estimated value of the package is $2,000.

Thanksgiving Cheers from the Sunshine State

As you may know, I moved to the USA from Canada when I was
12 years old.  Thanksgiving isn’t a
holiday I grew up with, and since I have no family in the USA, I’ve always
gravitated towards a turkey day with friends who are also without family in the
states.

For the last 10-15 years, the friends I’ve spent most Thanksgivings
with are my Florida friends.  They either
come up to New Jersey to celebrate with us, or we fly down to Ft Lauderdale to
nosh with them.  This year, we’re in
South Florida and something’s going to be very different about our traditional
meal – I’ll not be cooking it all myself!
This morning, I’ll bake a Maple
Bourbon Pecan Pie
and some stuffing, but the rest of the feast will be
prepared by my girlfriend’s husband while the girls hit the beach for brunch!

I’m looking forward to this new tradition and to spending
quality time with folks who mean a lot to me.
Whatever you’ll be doing today, make it special and memorable.

Happy Veteran’s Day

Although I’ve lived in the USA for over 20 years, I’ve only been an American citizen for about 15 years.  The process for a Canadian to become an American is long and costly and I wasn’t eligible for about the first 5 years.  I remember the day I took my oath and got my American citizenship certificate – I was so proud to finally be an American!

Today’s Veteran’s Day and I want to share my gratitude to the brave men and women who have served and are serving our country.  Special thanks to my friends who are veterans and prayers to those out there risking their lives to make certain that the American spirit remains strong throughout the world.

Butter – What You Need to Know

The holidays are right around the corner and some of us will be baking like mad.  A key ingredient of flavorful baked goods is the right, high-quality butter.  Here’s what you need to know about this golden beauty.

According to the Wisconsin Milk Marketing Board, butter is a food product, which is made exclusively from milk, cream or both, with or without common salt, and containing at least 80 percent milk fat by weight.

Sweet cream butter and cultured cream butter are two main varieties of butter produced in the United States. Sweet cream butter includes:

  1. Salted butter:  Ideal for everyday cooking.  Sea salt and fleur de sel butters are great when used as condiments.
  2. Unsalted butter:  A favorite of bakers.  Helps the natural flavors of baked goods come through and is key to creating flaky pie or tart crusts.
  3. Whipped butter:  Easily spreadable from air having been whipped into the butter creating a light and airy consistency.  Not a good choice for cooking or baking due to its low density.

Cultured butter, a richer style of butter prominent in Europe, is becoming more popular in America.

Other butters to keep in mind:

  • Preserved butter (Smen in Morocco) – fermented butter that’s been aged up to 2 years to a pungent flavor.
  • Clarified butter (Ghee in India) – this high smoke point butter is created by heating butter to a point where its water content evaporates and its milk solids are removed.
  • Raw cream butter – difficult to find in the United States, this butter is made from unpasteurized milk (miss this type of butter growing up in Quebec).

Whichever butter you use this holiday season, be sure it’s of the highest quality available.  Here are some of my favorites:

Some news for my Chicago friends, Fleming’s Prime Steakhouse & Wine Bar has a new small plates menu offering the following dishes that sound amazing:

  • Sliced Filet Mignon on shiitake risotto, chili oil, drizzled with porcini butter
  •  Jumbo Shrimp Scampi Skewers with Chimichurri dipping sauce and avocado citrus salad

For My New Jersey Friends,

Those of you who follow my blog, Tweets or Facebook posts know that I live in New Jersey and love to cook and bake.  With so much focus on various ways to help end world hunger, we often lose sight of what’s going on right in our own communities.

One of the ways I’m involved in ending child hunger in my region is through Share the Strength’s No Kid Hungry and come January, I’ll be able to help the Community FoodBank of New Jersey with my flash sale site restaurant deal purchases through 3 Square Deals.  For those of you who are fans of Groupon, Living Social or Daily Deals, this will be a place where deals will be offered (either daily or weekly) and a portion of what you spend for the deal will be given to the Community FoodBank (with other food banks sure to come on board down the road).

Happy Lazy Sunday, Post Fondue Night

Last night, I had some friends over for fondue night.  We don’t fondue as often as we should because when we do, it’s a great time.  There’s no better way to stretch out a meal than to fondue.

I served a cheese fondue made using Cabot Seriously Sharp Cheddar from Vermont and Victory Headwaters.  Sharp cheese and beer – winning!  For dinner, I typically do a fondue pot with beefy, wine broth for shrimp, chicken and cheese cubes and a pot with hot oil for beef tenderloin.  The dinner fondues are served with three dipping sauces, this time: Sriracha and maple mayo, a Dijon mustard and tarragon mayo and a garlic mayo.  Just a fun concept and please ping me if you’d like fondue tips.

Today is football day at our home and we usually take it super easy on Sunday afternoons.  This means that I typically make dinner in the morning so we can just eat in front of the television later.  Today, I made my Grandma’s amazing meat sauce that we’ll eat with spaghetti.  I double the sauce recipe as it freezes beautifully.
