André’s opened in 1998 in Newton and soon became the jewel in northwestern New Jersey’s culinary crown. In its 20th year in business, the popular restaurant is now situated in Sparta on beautiful Seneca Lake and continues to wow diners with its excellent service, delicious food and idyllic setting. 

About the Food

Foie Gras

Chef deWaal cooks up French food with Asian touches with attention to every detail. 

Food is offered à la carte, as a five-course menu or as a Chef’s Tasting menu. The five-course dinner entails a selection of a soup, appetizer, salad, main course and a dessert – a bargain at just $38 more than the price of the main courses. The Chef’s tastings are available in six, seven and eight courses and the food’s left up to the chef’s choice.

When we last visited, the spring menu had just launched. By the way, much praise to restaurants who serve amazing breads and a choice of “standard” butter or duck fat butter – well played, I was hooked from the start of the meal.

Our party of three shared some starters, the Charcuterie Plate, Steak Tartare, Salmon Tartare (a special) and Foie Gras. The charcuterie plate featured high-quality meats and when paired with the fantastic bread, it was a winner. The steak tartare is of pristine quality and served with grilled buttery bread, quail egg and black garlic. The salmon tartare special came with a perfectly-fried oyster over paper-thin slices of cucumber – the salmon was great but the restaurant should consider serving fried oysters as a special – it was outstanding. The foie gras was expertly-seared and served in a fun peanut butter & jelly preparation – a must order.

For our entrées, we opted for the Halibut (the fish of the day), the Farfalle Pasta and the Swordfish (a special). The halibut was chickpea-crusted and served with cauliflower and cumin – great flavor combinations and a sizable piece of fish. The pasta was tossed with an ultra-flavorful boar meat sauce – a perfect match to the Pinot Noir we brought. The swordfish was perhaps our favorite entrée with its seafood dumplings and steamed baby bok choy – the fish was cooked perfectly and the dish showcased the lovely Asian-inspired flavors Chef deWaal is known to incorporate in his food.

Coffee is top notch, so don’t skip it. We shared the Crème Brulée and the Chocolate Cabernet Gateau for dessert. The crème brulée was a nice example of the fan-favorite. The chocolate cake with its red wine notes was served with a chocolate glaze and interesting peppercorn ice cream.

Andre’s also offers catering services for weddings, anniversaries and other special events and hands-on cooking classes that are perfect for individuals looking for a fun night out and for corporate team building outings.

Note that André’s is a BYOB and diners are welcomed to bring their own wines. New Jersey’s own ALBA Vineyards Wines are also available for purchase at the popular restaurant.

On a recent visit, my party started with the mouth-watering Wild Mushrooms Pizza, the Arancini and the House-Made Ricotta Gnudi. The pizza at VB3 is simply amazing and shows the skills Colletti acquired working a pizza oven since the early stages of his career. The version we tried showcases tangy Pecorino, woodsy mushrooms, truffle and thyme. The arancini are what I’d want my Italian mamma to fix me for Sunday dinner if I had an Italian mamma – crunchy on the outside, creamy on the inside with dreamy sauce. What can I say about the ricotta gnudi besides that I’ve had it every time I’ve visited VB3 and it’s divine? The light-as-a-feather, melt-in-your-mouth, pillowy-soft gnudi are served with a light, basil-infused tomato sauce that will sure cause any diners to have dreams of the next bowl.

Fortunate for us, Chef Colletti was launching his fall/winter menu when we visited and the options are fab. We opted for the Berkshire Pork Chop, the Atlantic Salmon and the Hanger Steak. The pork chop was masterly cooked and served with warm fingerling potatoes, pancetta and a frisée salad. The salmon is served in a sizeable portion with sweet potato purée and toasted pumpkin seeds. The hanger steak was beefy and tender and paired with grilled asparagus and a tangy salsa verde.

For the first time since coming to VB3, we were tempted by the desserts. We sampled the Chocolate Hazelnut Cake with orange crema and the seasonal Fig Cheesecake. Both were outstanding.

10/21/12 Update: After a visit on 10/20/12, I can no longer recommend Adara. The food is still delicious, but the new staff’s poor job and the 4-hour wait for three courses is not worth the food.

Adara, located in a secluded area off busy Bloomfield Avenue, offers perhaps the best culinary experience to be had in New Jersey.  The restaurant dubs its food as “Modernist” in style, and paired with top notch service and an elegant, understated space, it is simply fabulous.

Acqua di Gio

Wylie Dufresne, Grant Achatz and Ferran Adrià have popularized molecular gastronomy and have made it an exciting part of American culinary culture.  At Adara, Art Institute of New York City graduate and ACF certified Master Chef, Tre Ghoshal runs with the concept, flawlessly.

The menu at Adara offers a la carte options and three-course ($65), five-course ($85) and seven-course ($110) prix fixe tour menus.  Feeling adventurous?  There is also the grand tour, featuring 12 inventive courses ($175).

On a recent visit, General Manager, Philip Dowling and his attentive staff, eagerly guided our party through the 5-course menu that featured such dishes as the New England Clam Chowder – a bowl of complex flavors served with quail egg, masago, maple pancetta and tasty foam that Adara calls “deep sea wind”, the Campania – chef Ghoshal’s version of Caprese salad with vine ripe tomatoes, a mozzarella ‘balloon’, an extra virgin olive oil sorbet and basil, the White Truffle Envelope – a Hudson Valley foie gras-filled raviolo served with kumquat mostarda, cappuccino and pistachio, and the Acqua di Gio – dry sea scallop with baby squid, bacon, English pea and popcorn.

Adara is a BYO and is a perfect occasion for guests to dust off those great bottles and create their own wine pairings.

Adara is a must-try establishment with its creative, flavorful and breathtaking food.  It is participating in Montclair Restaurant Week with a $31, 3-course menu from March 19th through April 1st.
